2 lb strawberries, washed and hulled and halved
3 ½ cups granulated sugar
12 cups sparkling water
½ pt heavy whipping cream
¼ cup granulated sugar
¼ cup water
1 ½ tbsp anise
1. Combine strawberries and sugar in a large bowl. Let sit for 12 hours at room temperature, stir twice.
2. For the whipped cream, combine sugar, water, and anise in a small sauce pan over medium heat. Let simmer till it thickens. Reserve syrup in a small container and let cool in the fridge. In the meantime, mix the heavy whipping cream in a chilled bowl with a hand mixer at medium speed until hard peaks occur. Retrieve the anise syrup and slowly add to the heavy cream, careful not to break the mixture. When it is all incorporated, chill the whipped cream in the fridge.
3. For the soda, set a fine mesh strainer over a medium bowl and pour the strawberry mixture into the strainer. Do nut smash the strawberries, but stir. Reserve the strawberries for another use after straining - perhaps a strawberry-rhubarb upside down cake!
4. To serve, mix ¼ cup of the strawberry syrup with ½ cup sparkling water in a clear cup, and top with the anise whipped cream.
