2 cups of Sungolds, sliced
4 cloves of garlic, minced
2 Tablespoons Olive Oil
2 Cups of Mozzarella or Yogurt Cheese
1 tablespoon fresh oregano or thyme
salt and pepper to taste
1. Preheat oven to 425 degrees
2. Spread out the sungolds in a glass baking dish. Add the garlic, fresh herbs, salt and pepper. Drizzle with olive oil.
3. Bake for 20 minutes. Take the tomatoes out of the oven. Add the cheese of your choice and return to the oven for 5 minutes, or until the cheese is nice and melty.
4. Serve on a sliced baguette or over pasta!
