Corn, Leek, and Cumin Stir Fry

Ingredients

-4 ears Corn shucked and kernels sliced from cob
-2 TBSP Ghee or Vegetable Oil
-1/2 tsp Cumin Seeds
-1 Leek, washed and white and green parts chopped finely
-1/2 tsp fresh ground Black Pepper
-2 TBSP Basil, chopped
-1/2 Lemon, juiced
-Salt and Pepper

Directions

-Heat Ghee or Oil in frying pan, medium high heat, add Cumin seeds and toast about 60 seconds, till they just start to brown.
-Reduce heat a bit, add the chopped Leeks. Cook for about 5 minutes, stir occasionally, until wilted down.
-Add Black Pepper and Corn, cook about 2 minutes, stirring a couple times. Turn heat off.
-Finally squeeze in Lemon and fold in Basil. Salt to taste.
-Enjoy!
