Curtido

An El Salvadoran classic often paired with pupusas, this is one of Jenni’s favorite slaw/relish recipes summer or winter. Not only delicious with hearty pupusas, it’s also a great addition to any plate, tucked into sandwiches or wraps, or even alone as a refreshing snack. Don’t skimp on the oregano!

Curly and his Abuelita on Tasty

Ingredients

1/2 head Green Cabbage, sliced thinly

1/2 Kohlrabi, grated or sliced to matchsticks

1 small onion sliced or diced

2 carrots grated

4 cups boiling water

1 cup vinegar, Apple Cider or White

2 tsp Salt

3 TBSP fresh oregano leaves chopped, or 3 tsp dried oregano

Directions

Mix vegetables and onion in a glass or ceramic bowl. Pour in boiling water, mix and let sit 10 minutes.

Drain water

Mix vinegar, salt, and oregano. Pour over vegetables, mix well. Pack into jar and chill in refrigerator at least overnight. Stores well in the fridge for about a week. Enjoy!
