Tahini Dressing

I like to use this rich sesame dressing on green salads, but also on roasted vegetables, or especially a roasted root vegetable salad bowl. Usually I make the basic and then take a bit and make variations meal by meal. Enjoy!

Ingredients

1/4 olive oil (or neutral salad oil, your choice)
1/4 cup tahini
3 Tablespoons lemon juice (Apple Cider Vinegar works great when lemons are out of season)
2 teaspoons Dijon mustard (optional)
2 teaspoons honey (or maple syrup)
salt & pepper, to taste
2 Tablespoons ice cold water

Variations- Add to taste:

Minced Garlic
Tamari or Soy Sauce
Mint, Parsley, Cilantro, and/or Dill
Green onions or Chives
Toasted Sesame Oil for even more sesame flavor

Directions

Add all the salad dressing ingredients (except the water) into a mason jar. Add a lid and shake until well combined. Add the cold water to thin to desired consistency. Shake again. Enjoy!
