Watermelon Radish & Arugula Salad

Ingredients

-4 oz bag of Arugula
-
2 or 3 Watermelon Radishes, thinly sliced
-1/4 cup cilantro, finely chopped
-1/4 crumbled goat or feta cheese
-2 tablespoons Orange Juice, freshly squeezed
-1 tablespoon Lime Juice, freshly squeezed
-1 tablespoons Apple Cider Vinegar
-1 small Shallot, minced
-4 tablespoons Olive Oil
-Salt & Pepper, to taste

Directions

Step 1: Add the orange juice, lime juice, apple cider vinegar, shallot, salt and pepper to a mason jar. Whisk or shake the jar until the ingredients are combined. Add in the olive oil and mix again. 

Step 2: In a shallow bowl, marinate the radish slices in a few tablespoons of the dressing for at least 10 minutes. 

Step 3: Add the arugula, cilantro, and marinated radishes to a large salad bowl. Add in the remainder of the dressing. Toss to coat. Garnish with your choice of cheese. Enjoy!
