John’s Favorite Raspberry Mint Muffins
Shirley keeps this recipe tacked up inside the cupboard. It was one of John’s favorites. Mint is optional, and very tasty.

Ingredients
1 cup Flour
1 cup Oatmeal
3 tsp. Baking Powder
1/4 cup Sugar
1 Egg, or substitute
1 cup Milk
3 TBSP Oil
1/2 pint Raspberries (1 cup)
1 TBSP chopped fresh Mint
Directions
Preheat oven to 425 F. Mix dry ingredients, then add remaining ingredients. Bake at 425 F for 12-15 minutes. Enjoy!
