Ingredients
-1 or 2 bunches of Kale
-a few cloves of Garlic, or a bunch of Spring Garlic or Scapes
-Olive Oil
-the juice of one Lemon, about 2-3 Tbsp
-Salt and Pepper to taste
Directions
- Wash kale leaves and remove stems. (You can do this by gripping the stem at the bottom of the leaf with one hand, and sliding your other hand up the stem, pulling off the leaf as you go.)
- Roughly chop kale leaves - Peel and mince a few cloves of garlic, or chop the bunch of spring garlic/scapes.
- Put a couple TBSP olive oil into a large pot over medium high heat. When the oil is hot, add chopped kale and turn/stir quickly to coat the leaves with oil.
- Add the minced/chopped garlic and mix well. - If the pot is dry, add a little water to prevent it from sticking.
- Cover and cook ‘til kale is tender, just a minute or two -- it depends on how tender the kale is to start with and how chewy you like it!
- Add lemon juice, and salt and pepper to taste.
- Enjoy!
