Kale and Chard Salad with Maple Vinaigrette

Ingredients

Salad:

-Lacinato Kale, thinly sliced
-Chard, thinly sliced
-Blue cheese, crumbled
-Walnuts, chopped
-Dried Cranberries
-Apple, thinly sliced

Maple Vinaigrette:

-Assemble the following in a jar and shake well, stores well in the fridge for several days.
-2 tsp Maple Syrup
-1/8 tsp Sweet Paprika
-1/4 cup Apple Cider Vinegar
-1/4 cup light flavored oil
-Good pinch of salt
-Fresh Ground Pepper

Directions

Combine greens in a bowl, dress, and toss to combine. Let sit for a few minutes to tenderize and meld. Add the cheese, walnuts, cranberries, and apple, toss again and add a bit more vinaigrette if desired. Enjoy!
