Parsley & Beet Salad

Ingredients

-1/4 cup orange juice
-1/4 cup olive oil
-2 LB red beets
-1/4 of a red onion, sliced into thin strips
-1 bunch of parsley, finely chopped
-1 bunch dill, finely chopped
-Salt & Pepper, to taste
-Juice of 1/2 a lemon
Optional: goat cheese for topping

Directions

Step 1: Mix the oil and orange juice in a small bowl. Add salt and pepper.
Step 2: Peel the beets. Slice thinly into match sticks. Add to serving dish.
Step 3: Add the onions, parsley and dill.
Step 4: Pour oil and juice mixture into the bowl. Mix until evenly coated. Let stand thirty minutes, for flavors to develop.
Step 5: Add salt and pepper, to taste. Add lemon juice. Top with goat cheese. Enjoy!
